Tis’ the season for festive fun with the family. So, we’ve teamed up with Barbour to bring you a series of simple guides, to help you stir up some seasonal magic with your nearest and dearest. To get all your appetites and creativity stirring, here’s a handy how-to on baking mince pies, with home and lifestyle blogger, Sarah-Jane (aka Just a Little Build). Gather what you need and enjoy.
Sarah-Jane: “I like to do Christmas activities with my children that are relatively simple, with maximum fun. My boys absolutely love mince pies so being able to create their very own with two ready-to-go ingredients, is great! As the making is so quick, they have more time to be creative and often we mix it up a little by using different shaped cutters to create unique, homemade-feeling shapes!”
Ingredients
Ready-rolled shortcrust pastry
Flour
Jar of mincemeat
Milk or a beaten egg for glazing
Icing sugar for dusting
Method
Step 1: Preheat the oven to 200° (190°C for fan-assisted ovens).
Step 2: Lightly dust the work surface with flour.
Step 3: Roll out the ready rolled pastry and using a round or scallop edged cutter, cut out 12 pastry bases.
Step 4: Place them in the cupcake tin and using a teaspoon, spoon the mince meat into each pastry base.
Step 5: To make the pastry tops we used a star cutter to cut them out of the pastry and placed them on the top of the minced meat.
Step 6: Brush with milk or egg to glaze the pastry tops and pop them in the oven for 15-20 minutes or until the pastry is golden brown.
Step 7: Take them out of the oven, leave to cool and then lightly dust with icing sugar.
Finally, get cosy, make a cup of tea and enjoy maybe just one too many mince pies!
